Picodon is a lactic cheese made from raw whole goat's milk, with a soft or even hard paste.
To be enjoyed with fresh white bread, a dry or sweet white wine, red wine from its region or Beaujolais, a Pinot noir or white.
Paired with this cheese: fig confit, apricot jam with lavender flowers, Provence herbs. Excellent when macerated in olive oil.
