From Bourgogne-Franche-Comté (Doubs, Jura, Saône-et-Loire)

Our Comté is aged for 12 months and has a firm, pliable, ivory-coloured paste. It's rich and fruity flavoured, with a hint of sweetness.

It comes in large wheels 65 cm in diameter and an average weight of 40 kg. It takes about 450 liters of milk to produce a single county wheel.

To be enjoyed with fresh white bread, with dry white wine, light red wine and even hot or iced tea. 
To pair with this cheese: A mango chutney, an apricot confit or a chestnut cream.
