Sainte Maure is one of the classic cheeses from France.  

Sainte Maure, made from raw or pasteurized goat's milk, is produced mainly in Loire Valley in middle France. This buttery, smooth cheese with little acidic flavor emerges drier, denser, and a fine grey-blue edible rind.

To be enjoyed with fresh white bread, dry white wine such as Sancerre, Pouilly, Chablis, Bordeaux blanc, Pacherenc, syrupy white wine, Burgundy.
